Soup for dinner.
Sunday afternoons are great for letting something simmer on the stove or in a crock pot while you watch football or rake some leaves. I’m making some minestrone with cannellini beans, Yukon gold potatoes, carrots, spinach, onion and chicken stock. It’s a hearty soup that you can serve chunky or purée. I like to serve it with some garlic bread on the side or some stale bread under it in the bowl. If you have a spare rind of parmigiano cheese, you can toss that into the hot soup pot too.
